Oh So Easy-Yummy Fudge!

EASY FUDGE healthy and in less than 10 minutes……..no really!

What if I told you that you can make Easy fudge with only 2 ingredients? Without wanting to brag, I think they are the best I ever ate! And the best part, you can customize the recipe with what you have on hand OR/AND simply to fit the season or your taste!

First, I want to tell you that I’m a big fan of chocolate in all ways. But when it comes to fudge, I think the chocolate taste is lost with all the other ingredients and it’s waaaay too sweet.

This easy fudge recipe was born with me trying to test a tastier/healthier way to make chocolate/hazelnut spread… Very good, but a bit too hard to spread! So I discovered that if I make bites out of that mixture and keep them in the fridge, I will have oh-so-yummy treats on hands. And it’s so quick and easy, that it’s now my go-to recipe when I have a last minute dessert to prepare.

By the way, I’m still trying to come up with an interesting spread recipe that actually tastes good AND is not too hard on the bread!

The recipe takes less than 10 minutes to prepare and makes approximately 20 bites. For today’s post, I used nuts & seeds butter (I love that special crunchy side from the Chia seeds!), semi-sweet chocolate chips, dry cranberries, and sliced almonds.

Ingredients:

  • 300 g (10.50 oz)  Nut/Peanut/Seed Butter (choose your favorite one!)
  • 300 g  (10.50 oz) Chocolate Chips (sweet or semi-sweet, as you like it)
  • 100 g (3.50 oz) of optional ingredients like Dry Fruits, Chopped Nuts, Seeds, …

Method:

  1. In a medium saucepan stir together your choice of butter and chocolate chips.
  2. Cook over low heat, and stir constantly.
  3. Once the chocolate chips are almost melted, remove from heat and add your desired ingredients. Stir vigorously until it is very well mixed.
  4. Line a 9” x 9” Pyrex baking dish with plastic food wrap (easier to remove and cut) and pour in the melted mixture.
  5. Refrigerate until set and ready to cut (approximately an hour).

Note: I recommend to keep the fudge in the fridge until time to serve because it tastes better and it tends to soften easily.
